Tomato Summergalette – “Savory shortcrust pastry”

It´s summertime! The constant heat and sun over the past few weeks are the perfect conditions for the different types of tomatoes in my organic garden. My father brought some Beefsteak tomato seeds from one of his travels to Russia. I have never tasted better tomatoes that these once and they come back every year, not like many other Hybrid seeds out there sold in the markets. This Tomato Summergalette recipe is one of my favorites and I make it minimum once a week during tomato harvest season. It is super easy to prepare and full of flavors and aroma, cold or hot a true pleasure. How to do:

Preparation: Assemble all the Ingredients. Keep the Water and Bowl chilled for the dough. ( I use to grind the Buckwheat fresh which is not necessary but gives a better taste and better nutritional values).

1. For the dough, mix spelt– and buckwheat flour and the flax seeds (you can use 50g/50g Lupin flour and Buckwheat flour which gives also a nice taste) with your hands quickly together add salt, pepper and cold butter cubes to a crumbly dough.

2. Add water gradually and knead quickly until a ball can be formed. Importantly, leave the dough in the fridge for 30 minutes. Pre Heat the Oven 180 degrees Circulating Air.

3. For the hummus puree all ingredients and season with salt and pepper.

4. Slice tomatoes and zucchini. Besides that, Core plums and cut into slices.

5. Roll out the dough on a baking sheet lined with baking paper to a diameter of about 35cm.

6. Spread the galette with the hummus about 1 / 2cm thick.

7. On top of the Hummus, lay down the veggies and the plum. Leave about 7cm to the edge without the spread. After that, hit the edge in now on top of the spread (as seen in the picture). Furthermore, Garnish with some thyme leaves and sprinkle with olive oil. Bake the Galette for 40-50 min until crusty brown baked.
